Inspired by the famous beaches of the Côte d’Azur and landscapes of Provence, Gin d'Azur has juniper complimented with Provencal botanicals of thyme, rosemary, lavender, marjoram, mountain savory, star anise, and Menton lemon peel. Each Provencal ingredient is harvested at its optimum ripeness and aromatic peak. The ingredients are distilled separately in copper pot stills over and open flame and then magnified by a hint of Camargue salt.

Provençal botanicals

Created using the finest botanicals from the breadth of the Côte d’Azur, including Citron du Menton, Lavender, Thyme, Rosemary, Marjoram, Mountain Savory, Star Anise and Sel de Camargue. Gin d'Azur makes the most of its Provençal botanicals. Each one has been harvested at its aromatic peak, and then they're all distilled separately.


a message from our master blender

The botanicals in Gin d'Azur are distilled separately using the copper pot still (Alambic Charentais). For each botanical we have designed a custom distillation profile (including temperature, cuts of foreshots and feints and pressure of gas) in order to capture the best aromatic compounds. We are sourcing the ingredients from across the Provence region. The lavender is from the region of Alpes-de-hautes-Provence (Valensole, Manosque and Castellane) and the lemon is from Menton at the border between France and Italy. Like a perfume it is not so much each ingredient that is important but the combination of each element in the right proportion to really give the feeling of being in the middle of “la garrigue” (scrubland in English). The main criteria for choosing the ingredients was the origin: they had to come from Provence (Côte d’Azur) and be typical of this region.

Launched in 2019, Gin d'Azur is produced at the family-run Distillerie Merlet in Saint Savaunt, Cognac. With an aim to capture the essence of the Cote d'Azur and the native floral or the French Riviera, Gin d'Azur features native botanicals.
